The DENI Philosophy: Local Sourcing, Self-Production, and Identity
Behind DENI PUB lies a vision that goes beyond the restaurant business: to promote the Varaita Valley through culture, cuisine, and self-production. From this idea was born Origine Selvatica, the DENI project’s farm, founded on the pursuit of authentic, seasonal ingredients deeply rooted in the Alpine region.
The philosophy of self-production lies at the heart of the project: directly cultivating, processing, and selecting what arrives in the kitchen means creating a genuine connection between the land, people, and the table. Wild herbs, vegetables, preserves, fermented foods, and valley products become tools for expressing a distinct identity—far removed from industrial logic and close to nature, seasonal rhythms, and local tradition reinterpreted in a contemporary way.
DENI was born from the desire to bring the Varaita Valley back to the forefront, transforming it into a cultural, gastronomic, and creative hub. Every dish, event, or project tells the story of a territory often overlooked yet rich in history, biodiversity, and human talent. The goal is to create value in the valley by collaborating with producers, artisans, musicians, and local organizations, building a network capable of infusing new energy into the region without altering its essence.
DENI aims to be more than just a pub or a brand; it is an independent ecosystem where ideas, dedication, and a sense of belonging come together to create something authentic and enduring.
